Jamaican Pepper Shrimp Recipe
Ingredients:
- 1 pound large shrimp, deveined and shells on
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 Scotch bonnet pepper, finely chopped (use gloves and be careful, it's very spicy)
- 1 teaspoon allspice (pimento)
- 1 teaspoon smoked paprika
- 1 teaspoon thyme leaves
- 1 teaspoon sugar
- Salt and black pepper to taste
- Juice of 1 lime
- 1/4 cup water
- 2 green onions, chopped
- Fresh cilantro for garnish (optional)
Instructions:

Marinate the Shrimp:
- In a large bowl, combine the shrimp with salt, black pepper, allspice, and lime juice. Mix well and let it marinate for about 15-20 minutes.

Prepare the Sauce:
- In a skillet or large pan, heat the vegetable oil over medium heat.
- Add the minced garlic and Scotch bonnet pepper to the pan. Sauté for about 1 minute, being careful not to let the garlic burn.
- Add the smoked paprika, thyme, and sugar to the pan, stirring to combine.

- Add the marinated shrimp to the pan and cook for about 2-3 minutes on each side, or until the shrimp turn pink and are cooked through.
- Pour in the water and stir to create a sauce. Let it simmer for another 2-3 minutes until the sauce thickens slightly.

- Stir in the chopped green onions and cook for another minute.
- Remove from heat and garnish with fresh cilantro if desired.
